Bottoms Up Brewhouse: Combining Casual With ClassyBy Mary Ann O'Toole Holley
They wanted a neighborhood place, casual but classy, where they and the family could hang out, socialize in an unpretentious way, eat great food and sip some fabulous suds not usually available in these parts. And that’s how Bottoms Up Brewhouse was born. The Milans and the Andersons created an eatery and pub where you won’t likely find many chug-a-lugs or brawling beer drinkers, but diners and those who appreciate an elegant symmetry of 60 craft and microbrew beers, fine food and friends in a chic little spot along Hwy. K’s Babble Creek strip mall. On top of it all, there’s Zeus, the “god of the grill,” who brings the finest of food to your tall or short table, leather sofa or barstool. Named for the king of the Greek gods, the ruler of Mount Olympus and god of sky and thunder in Greek mythology, Zeus now rules the culinary creations at Bottoms Up Brewhouse. Bottoms Up, decorated in a tasteful, subtle way, using the image of classic American beauty—the pinup girl—as its logo, opened Aug. 13, a lucky day for the Milans and Andersons. “We put off opening several months so we could make sure we were presenting a product that O’Fallon needs,” Mike Milan said. “We wanted the best beer, the best foods and the best environment we could create.” Bottoms Up created a menu from scratch, offering appetizers, sandwiches, soups and pastas. More unique entrees include, as Mike Anderson describes, “a beautiful 16-ounce pork steak marinated in cilantro, lime and pineapple” and their signature Bottoms Up pizza, “a work of art in itself” that falls somewhere between a stromboli and calzone, but is nothing like it. With a blend of various doughs that end up melting in your mouth like a buttery croissant, the upside down pizza and its arrangement of Italian sausage, pepperoni, onion, mushroom, green peppers, a hearty sauce and layers of cheese is highly recommended ($15.99). Zeus says his Cuban sandwich creation is comparable to Latin rhythms and jazz, but Mike Anderson describes it as “like a party for your taste buds.” Its marinated pork, ham, Swiss cheese, mustard and pickles is grilled to perfection and served with one side item ($8.99). Bottoms Up half-pound burgers are made with certified Angus beef, and available with an array of toppings including everything from banana peppers to mushroom sauce and every cheese imaginable ($6.99). “The menu was the result of a group brainstorming session,” Mike Milan said. “Of course we used Zeus’ expertise and threw in some old family favorites.” The Milans and the Andersons share responsibilities of the business, but any day of the week you’ll find an owner on hand to help you test drive the barrage of beers or make a decision on your menu selection. “If you come here and can’t find a beer you like, you don’t like beer,” Mike Milan said. A sampler of five beers of choice served in 6-ounce glasses is available for those in an exploratory mood. “We want our customers to gain an appreciation for crafted beers, yet we still have the staples like Budweiser and other Anheuser Busch products,” Mike Milan said. Each week there is a featured beer and a $5 lunch special is served daily. Every Thursday, Friday and Saturday from 8 p.m. to midnight live entertainment in the form of acoustic guitar or jazz will serve as a backdrop for your evening’s pleasure. “Music is the background to create an environment,” Mike Milan said. “We’re not like the typical sports bar. Anyone can throw up a bunch of Cardinal photos and sports memorabilia. We’re trying to be a new choice for those who want something casual, yet classy.”
